What you need
1 small cucumber
1 bunch buckwheat noodles
decent pinch dried wakame seaweed or
half as much hydrated seaweed as cucumber
2 tblsn rice vinegar
2 tspn light soy sauce
2 tspn sesame oil
How to do it
If using dried wakame, put it in water now. Let sit for 20-30 minutes (start other preparations after about 15 minutes).
Slice cucumber fairly finely. Mix with a pinch of salt and let sit aside for about 5 minutes. In the meantime, start water boiling for noodles. While waiting for that, mix the liquids together for the sauce.
The noodles should take about 5 minutes in the water. Just before they are ready, drain the liquid from the cucumbers, and pat them dry with a paper towel. Mix cucumber with hydrated wakame. Drain the noodles and rinse with cold water. Throw the noodles in with the cucumber and seaweed. Add dressing.
